I used cling wrap to cover the bamboo mat. This prevents it from getting dirty (they are a pain to clean).
1. Lightly wet the gap at the bottom of the sheet with your finger. 
2. Roll the mat forward with two hands into the sushi. 
3. Roll the mat back to expose the roll. Rotate just the roll forward to seal the gap. Then repeat the process. 
4. Squeeze lightly each time to compress the sushi roll. 
5. Cut sushi and serve 😁🍣
