Yes, I got the classic ‘You’re so skinny... why are you here?’ I tried to smile nicely and explained that I work out to be fit and that it’s super important to have targets in life, when all I really wanted to do was enter into a full blown freak out about how working out is not only a means of losing weight. (I also work out to eat lol)
Seriously people! I can’t stress enough the importance of gearing your mind and body to have the motivation to do what is beneficial for you, internally and externally! Just as we are not born athletes, we are not born with a preexisting motivation. I am no different to anyone else. There are days where I just want to be a couch potato and huddle in my fuzzy blanket. When such demotivation strikes, I stop and remind myself of what’s important to me. And that is challenging myself to be a better version of what I used to be, the day prior! Doing that extra chest to floor push up, or that toe to bar that I’ve been practicing for a month now!🏃‍♀️🏃‍♀️🏃‍♀️💪🏻🙌🏻
Now that my rant is over, how delicious does this tahini massaged kale salad, with chickpea croutons, avocado, super seeds and vegan almond cheese look? 😍😍👌🏻

Stuffed Acorn Squash with Lentil Stuffing (Healthy Gluten-free Stuffing Alternative ) This might be one of my most requested fall recipe over the past 5 years. Sooo good, you will not even miss the bread. I do this stuffed in squash for a meatless meal or You can skip the squash and serve stuffing in a casserole for a great healthy Thanksgiving side. I often bought the ready made Lentils from Trader Joe’s to make it even quicker and easier. 
PS, I turn this into soup with leftover turkey🍗🍽. 2 Tbsp. coconut oil
1 medium yellow onion, chopped
6 stalks celery, finely chopped
2 carrots, diced
1 cup mushrooms, chopped
1 tsp. sage (more if using fresh)
1 tsp. thyme (more if using fresh)
2 large acorn squash
 2 cups cooked lentils (this can be made without the lentils but then I double mushrooms)
1/4-1/2 cup apple sweetened (or low sugar) dried cranberries
Salt and pepper to taste

If using the squash, pre-heat oven to 350 degrees. Cut acorn squash in half. Fill a roasting pan with 1 inch of water, and place squash flesh-side down. Roast 45 minutes to an hour, or until very soft. Scrape out seeds and discard. To make the stuffing, Sauté onion, celery, carrots, mushrooms, sage, and thyme. Add the cooked lentils and heat through. Remove from heat. Stir in salt and pepper. Divide the stuffing evenly among the acorn squash halves or skip the squash and serve family style in a casserole.

Always use thes recipes as a base and change up! Last year Megan left out celery and used shaved Brussels sprouts. Possibilities are endless with healthy and whole food cooking! Promise ❤️#healthythanksgiving #healthyholidaysides #glutenfreestuffing #meatlessmeal #vegan
