leannemeiser's Instagram Photo - Weekend Dinner Inspiration from @cleanfoodcrush ! Recipe & Pic from @cleanfoodcrush ! Isn't it so pretty!! I like pretty food!! .
Ingredients:
1.5 lb. boneless, skinless chicken thighs, cut into halves 
2 Tbsps coconut oil, or olive oil
sea salt and pepper
2 Tbsps fresh squeezed lemon juice
¾ cup chicken broth
3-4 fresh garlic cloves, minced
2 tsp fresh rosemary, finely chopped .
Instructions 
1. Heat a large skillet over med-high heat and add the oil.
2. Sprinkle the chicken on both sides with sea salt and pepper.
3. Once the skillet is hot, add each chicken piece to the skillet in a single layer.
4. Allow the first side to cook about 4-5 minutes or until nicely browned, then flip and cook the second side for the same amount of time, until browned and just cooked through.
5. Remove the chicken pieces from the skillet onto a cutting board or plate and lower the heat to low. Add the broth, lemon juice, garlic and stir, scraping up any browned chicken bits.
6. Allow the sauce to cook/simmer for about a minute or two until thickened, then add the chicken back into the pan.
7. Flip the chicken in the pan to gently coat with the sauce and add the rosemary.
8. Cook for one more minute, then remove from heat and serve hot. Enjoy!

Most people don't have time for breakfast! But, after a night of fasting, you need more than coffee. Plus, coffee is super acidic! I always recommend that my clients start their day with a shake, but not just any shake! Here are a few things to look for...

What's the protein source? Just say ❌ to soy! Look for whey or pea isolate. My shake uses pea isolate.

What are the main ingredients? If there are artificial sweeteners or flavors, again, just say ❌! Make sure you know what you're eating.

Watch for sugar! So many smoothies are saying they're healthy but they have a ton of sugar. Just a reminder, you should be around 24g of sugar a day! 😳

I'm still getting back into a groove after my conference to New Orleans! I was able to connect with an amazing photographer, thank you @ibayphotography to get in a quick photo shoot! .
I never had any intention of my business becoming what it has. But, someone challenged me to dream big, and I just started to go after it!!

I can't wait to see what we can achieve this next year!!

I know my struggle is with nutrition! I'm going to be focused on being aware of each choice I make with my food. It won't mean that I'm perfect in my decision making, but I will no longer mindlessly eat 7 Oreos!! 😳

On our flight yesterday, we were sharing a row with a fellow coach. Here's the thing about most coaches, once we realize we're both coaches, it's like we're family separated at birth. We're instantly BFFs!! So, my coach Ashley and I are talking to this awesome girl and I notice that a top coach that I ADORE is right behind us! I had to contain myself, it was as if Carrie Underwood was behind me!
.
As our flight landed and we were able to stand up, I introduced myself to this coach and told her how much I adore her! .
We started talking about my business and struggles and she asked, what's your biggest struggle. I gave her 2, not even realizing. She looked at me and said, "what's your biggest struggle?" 😳. .
It hit me like a ton of bricks! .
My point... in life, we're trying to fix EVERYTHING!! That approach, at least for me, is not going so well! How's it going for you?? .
Let's just focus on one big thing at a time! Focus on simple tweaks to really perfect that area and then move on down your list to awesomeness!!!

CUCUMBER QUINOA SALAD
This Cucumber Quinoa Salad is made with lots of fresh basil and feta, tossed with a simple lemony vinaigrette, and it’s SO fresh and delicious! Plus, it’s naturally gluten-free and quick and easy to make.

TOTAL TIME: 10 MINS
.
INGREDIENTS:
.
CUCUMBER QUINOA SALAD INGREDIENTS:
.
1 English cucumber, diced
2 cups chilled* cooked quinoa (see this tutorial for how to cook quinoa)
1/2 cup diced red onion
1/2 cup crumbled feta cheese
1/3 cup julienned or roughly-chopped fresh basil leaves
1 batch Lemony Italian vinaigrette (see below)

LEMONY ITALIAN VINAIGRETTE INGREDIENTS:
1/4 cup olive oil
2 tablespoons apple cider vinegar or red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon Italian seasoning, homemade or store-bought
pinch of salt and black pepper

DIRECTIONS:
.
TO MAKE THE CUCUMBER QUINOA SALAD:
Toss all ingredients together until combined. Serve immediately.

TO MAKE THE LEMONY ITALIAN VINAIGRETTE:
Whisk all ingredients together in a small bowl until combined.

*If you add hot quinoa fresh out of the pan, it will melt the cheese and wilt the basil a bit in this recipe. So I recommend cooking it beforehand and letting it chill in the refrigerator before making the salad. Or, if you need to cook it immediately beforehand, just spread the cooked quinoa out in a thin layer on a baking sheet and pop it in the freezer for 15-20 minutes. That will help it cool down nice and quickly!

When I started on my fitness journey and started following other coaches, I was introduced to the idea that I could make a supplemental income with this. Other than Fayth's tears, I was happy at my job.

But, as each day passed, I started to think about how was I going to be able to "have it all!" How could I be the mom I wanted to be and have that income coming in and it be something that would challenge me. .
Today, as I saw those tears, I was reminded that I only leave 1-2 times each year. I have a job that allows me the freedom to be at home, make it to gymnastics, dance, school functions, doctors spots, etc., and gives us the income to still be able to do what we want.

It takes work, but it's seriously the most rewarding job I've ever had. .
Now, it's time for this momma to head to NOLA and learn from the best so we can be one of the best!! .

There were some tears this morning when I left! It took me back to when she was 2 and would sob when I dropped her off at daycare. She would love it once I left, but the tears at drop off killed me! . I knew being a 1 income family wasn't in the cards for us. We like the freedom to go out to dinner and buy new cars. I know it sounds snobbish, but that was our reality. .
